My pals, I recently got a unique package in the mail from my pals at Rachael Ray Nutrish. I was so excited … well, until Mom told me it wasn’t for me, but for my cats and my parents. I thought she was pulling my paws. So I opened up the container and she was right!
Nutrish sent my cat siblings Pepper and Pibb a package of their new Salmon and Brown Rice food (more on this great cat food tomorrow) to try out, and, they also sent Mom a gift card and some of the ingredients to make the human version of their new cat food. I immediately got a little scared. Mom isn’t a good cook, and I didn’t want her to burn down the house … hehehe. She promised me she was up for the challenge and would be super careful. Then, off to the store she went with the shopping list.
Here is the recipe:
INGREDIENTS
- 1 cup brown or white rice
- 1 bundle watercress or upland cress (2 cups), stemmed and coarsely chopped
- 2 tablespoons extra virgin olive oil (EVOO), divided
- 4 medium to large carrots or multi-colored farmer’s market carrots, peeled and cut into 1/4-inch dice
- Salt and pepper
- 1/4 teaspoon all-natural liquid smoke
- 1/2 cup dark amber maple syrup
- 2 tablespoons cider vinegar
- 4 salmon fillets, skin removed (8 ounces each)
- 2 teaspoons Old Bay seafood seasoning
- 2 cups frozen sweet peas
- 2 tablespoons butter
- 1/4 cup chives, chopped
Serves 4
PREPARATION
Prepare the brown or white rice, according to the package directions. When the rice is done, fluff with a fork and combine with the watercress leaves.
When the rice has been cooking for 5 minutes, pre-heat the broiler and heat a skillet over medium-high heat with 1 tablespoon EVOO, a turn of the pan. Add the carrots to the pan and season with salt and pepper. Sauté to tender-crisp, 6-7 minutes.
Meanwhile, in a small pot, bring the liquid smoke, maple syrup and vinegar to a boil and reduce over high heat, stirring constantly for 2 minutes. Remove from the heat.
Season the salmon with salt, pepper and Old Bay seafood seasoning. Heat the remaining tablespoon EVOO, a turn of the pan, in a large, ovensafe, nonstick skillet and cook the salmon top-side down, 3-4 minutes. Flip and pour the maple syrup glaze over the top of the fish and place under the broiler for 3 minutes to caramelize the glaze.
Add the peas to the carrots and heat through while the fish is under the broiler. Add the butter and chives to the veggies. When the butter has melted, turn off the heat.
Serve the salmon with the peas and carrots and rice with watercress alongside
Mom came home with everything but the watercress. She said she had no idea what that was and surely it wasn’t too important. See, I told you she isn’t a good cook … hehehe.
Next, she started cooking the rice and sautéed the carrots. Personally, I think she made way too many carrots, but I like them, so I didn’t say anything.
Next, it was time to season the salmon and cook it in a skillet. Oh my dog, it smelled so good and sweet (Mom says it was because of the maple syrup). Then, Mom got a little overwhelmed and called in Dad for help. She said she didn’t know how Rachael Ray can watch, stir, and combine different pots together, and talk to us on our TV sets all at the same time.
But I have to admit, Mom’s meal came out looking really nice. She gave me (and the cats) a tiny piece of the salmon too … and it was delicious! Good job Mom!
I asked the cats if Mom’s meal tasted similar to the new Rachel Ray Nutrish cat food. They said that yes it did, they can taste the delicious salmon in their new food. Tomorrow, we will be sharing more info about the feline food here on our website.
